Created by Destauch, the mod does exactly what you think: it replaces the all-black suit with an all-pink one. The first and most hilarious one is the Darth Vader in Pink mod.
There are several mods already available that do simple things like model and character swaps, mostly for a bit of fun without having an effect on gameplay. Star Wars: Battlefront 2 may have a very limited selection of customisation options, but that doesn't mean you can't add any yourself. Canon or not, the Star Wars: Battlefront 2 community on PC has been doing some great work to spice up the looks of our favourite heroes.
